This pumpkin soup is actually very easy to make, though it takes a little more work if you roast your own pumpkin. I made mine from pumpkins I grew in my own garden, harvested around the end of september.
It turned out very tasty - not sweet, like a pumpkin pie, as one would expect, which was good. I added a tadd too much cayenne for my tastes, but it was still very good. A very hearty and healthy soup. I tried to get mostly organic ingredients for it too, though it was a little hard with my dad's protests.
I'd also consider this low in fat, as the only non-vegetable ingredients are a little bit of butter and cream.
Also completely vegetarian ;)
Pumpkin Muffins with Walnuts
Not the best muffins I've ever had. They turned out heavy, because I doubled the recipe, but forgot to double the baking powder! Oops!
However, even without that little setback, it seems like something's missing, because they are a little bland. Next time I want to make pumpkin muffins I think I will try finding another recipe.
Ah, that cooking burst is over :)
Now I'm in a junk-art mood!
